American-Style Beef Lo Mein
(Soy-Free, Noodle-Forward Stir-Fry)

This is a hearty, American-Chinese takeout-style beef lo mein built around 500 g (about 1.1 lb) refrigerated lo mein (or egg linguine). The picanha (top sirloin cap) brings rich beefy flavor, while the sauce uses coconut aminos, Maggi seasoning, oyster sauce, and dry sherry for deep umami without any soy. We keep the vegetables balanced so the noodles and beef shine through.
Ingredients
For the Beef Marinade:
- 1.5 lbs (680 g) picanha/top sirloin, sliced thinly against the grain
- 2½ Tbsp cornstarch
- 2½ Tbsp coconut aminos
- 1½ Tbsp dry sherry (Alvear Fino) or Shaoxing rice wine
- 1¼ tsp MSG
- ½ tsp salt
- 1½ Tbsp avocado oil
For the Sauce:
- ⅓ cup coconut aminos
- 3 Tbsp oyster flavored sauce (Wok Mei)
- 2 Tbsp Maggi seasoning
- 2 Tbsp light brown sugar
- 2 Tbsp dry sherry (Alvear Fino) or Shaoxing rice wine
- 1 Tbsp toasted sesame oil (Eden)
- 1 Tbsp sriracha (adjust to taste)
- 2 tsp cornstarch
- ½ cup beef stock
- 1 tsp MSG (optional)
For the Stir-Fry:
- 500 g refrigerated lo mein noodles (substitute egg linguine as necessary)
- 3–4 Tbsp avocado oil (divided)
- 1 large sweet onion, thinly sliced
- 4–5 cloves fresh garlic, minced
- 1-inch piece fresh ginger, peeled and minced (~1 Tbsp)
- 2 red bell peppers, seeded and thinly sliced
- 8–10 oz white mushrooms, sliced
- 1–2 medium carrots, julienned or thinly sliced
- 6–8 oz snow peas, trimmed (about half a standard bag)
- 1 baby bok choy (~6–7 inches), sliced
- ¼ head napa cabbage, thinly shredded (about 1–1½ cups)
- Extra toasted sesame oil and sriracha for finishing
- Salt to taste

Instructions
- Prepare the Beef
Slice the picanha thinly against the grain (⅛–¼ inch). In a medium bowl, mix the marinade ingredients, then add the beef and toss thoroughly to coat. Let marinate at room temperature for 15–20 minutes.
- Make the Sauce
Whisk all sauce ingredients together in a bowl until the sugar and cornstarch fully dissolve. Taste and adjust if needed. Set aside.
- Cook the Noodles (Recommended first)
Bring a large pot of unsalted water to a boil. Cook the egg linguine for 2–3 minutes (or per package). Drain, rinse briefly under cold water to stop cooking, and toss with a small drizzle of toasted sesame oil. Set aside.
- Stir-Fry the Beef
Heat a large wok or skillet over high heat until very hot. Add 1–2 Tbsp avocado oil. Add the marinated beef in a single layer (cook in two batches if needed). Sear 1–2 minutes per side until browned but still slightly pink. Remove to a plate and set aside.
- Cook the Vegetables
In the same wok, add another 1–2 Tbsp avocado oil. Add the sweet onion and stir-fry 1–2 minutes.
Add garlic and ginger; stir-fry 30 seconds until fragrant.
Add red bell peppers, carrots, and mushrooms. Stir-fry 2–3 minutes until they start to soften but still have bite.
Add bok choy white stems and cook 1 minute.
- Combine Everything
Return the beef (and juices) to the wok. Pour in the sauce, bring to a simmer, and cook 1–2 minutes until slightly thickened.
Add the cooked noodles and toss thoroughly to coat.
Add snow peas, bok choy green leaves, and thinly shredded napa cabbage. Stir-fry another 1–2 minutes until vegetables are crisp-tender and everything is hot.
- Finish and Serve
Drizzle with extra toasted sesame oil and sriracha if desired. Taste and adjust with more Maggi or salt. Serve immediately in warm bowls.
Optional Garnishes: Toasted sesame seeds, sliced green onions.
Tips for Success
- Use high heat and don’t overcrowd the wok for best sear.
- Use a liberal amount of avacado oil, don't try to measure it as you use it.
- The picanha fat cap renders beautifully — leave it on.
- Prep bowls: Keep snow peas separate, and separate bok choy stems from leaves.
- Leftovers reheat well in a hot skillet with a splash of water or beef stock.
