JW's Easy Indoor Burgers
This method delivers a fantastic crust from a quick cast-iron sear, then finishes gently in a low oven for juicy, evenly cooked burgers. The beef-venison blend adds great flavor and leanness — or stick with all chuck if venison isn't available.

Prep Time: 20 minutes (plus 2 hours for meat to reach room temperature)
Cook Time: About 30–35 minutes (searing + oven)
Total Time: About 3 hours (mostly hands-off)
Ingredients
- 2 lb ground chuck (85/15 lean-to-fat ratio recommended)
- 1 lb ground venison (very lean; substitute with additional ground chuck if needed)
- Beef tallow or bacon grease
- Kosher salt (maldon or sea salt)
- Freshly ground black pepper
- Garlic powder
Optional for serving
- Burger buns (toasted)
- Bacon slices
- Cheese slices
- Lettuce, tomato, onion, pickles, condiments, etc.
Instructions
- Bring the meat to room temperature. Remove the ground chuck and venison from the refrigerator. Let the meat sit out at room temperature for 2 hours. This can happen before or after forming the patties — it works either way and helps ensure even cooking.
- Form the patties. Combine the 3 lb of meat if blending. Divide into 12 equal portions (¼ lb / ~113 g each). Smash hard against butcher paper to form flat patties, then gently move to fresh paper so that they are not stuck when you are trying to move them to the pan.
- Preheat the oven. Set your oven to 250°F. Prep a wire cooling rack inside a rimmed baking sheet (cookie sheet) — this setup allows fat to drip away while the burgers finish cooking evenly. Do not put baking sheet into oven yet.
- Heat the skillet. Place a large cast-iron skillet over medium-high to high heat. Liberally coat with beef tallow or bacon grease. Heat until the fat is extremely hot but just shy of smoking (any hotter and it'll smoke heavily).
- Sear the burgers. Working in batches (don't overcrowd), place the patties in the hot skillet. Sear for 60–90 seconds per side until a deep, rich crust develops. Flip once.
- Transfer and season. Transfer immediately to the wire rack on the prepared baking sheet. Season the hot patties generously with kosher salt, freshly ground black pepper, and garlic powder.
- Finish in the oven. Place the baking sheet in the preheated 250°F oven. Bake for 25 minutes, or until the internal temperature reaches 135°F in the thickest part (use an instant-read thermometer). This timing targets medium with carryover cooking.
- Rest. Remove from the oven and let the burgers rest on the rack for 5 minutes. They'll rise a few degrees during resting.
- Toasted buns. Put fresh buns in toaster oven with cheese until buns are golden and cheese is melted. You can do this while the burgers are resting.
- Serve. Place burgers on toasted buns and add your favorite toppings.
Notes
The 2-hour room-temp rest is key for that perfect even cook and crust.
Pulling at 135°F gives juicy results after the short rest. Cook to 140°F or even 145°F if you like your burger more well done.
This batch size works great for meal prep or feeding a group; leftovers reheat well in the microwave when placed under a glass steamer cover for even heating.

I'm using a scale to make balls and then pre smashing them with the spatula. it was actually way faster than eyeballing it and smashing by hand



these are a little thicker cause of the way i smashed em so i am going to use the meat probe instead of relying on 23 minutes
and fyi if you don't have time to let them come to room temperature you can meat probe it, the 23 minutes thing is based on starting the cook from room temp
it took 28 minutes to get to 135 internal this time, with a 90 second per side sear
